Mmmmm, lot's to go at here. However, here's the recipe:-

1lb of chicken (or 1 x medium chicken breast per person)
3 x garlic cloves, chopped (more if you wish)
1/2 onion finely chopped
8 small new potatoes, these can be halved
2 x tablespoons of Massaman Curry Paste (it has to be Massaman and not red or green which aren't the same)
440ml or 1 x tin of coconut milk

Heat a wok or suitable pan and fry the garlic and onion in a little oil until soft. Add these and the remaining ingredients to another suitable pan (you can always use the same pan if you wish) and simmer on a very low heat for 1 1/4 hours. Check every now and again to make sure the curry does not burn or stick onto the bottom of the pan. If it does, you are simmering too high.
When the meat and potatoes are about cooked add a handful of finely chopped cashew nuts, which will help thicken the curry. If you require a more stronger flavour add more curry paste, if you require a weaker (less spicey) flavour just add a teaspoon of brown or white sugar. All to your own taste.
Serve with plain basmati rice or Thai jasmine rice and enjoy.

For an addition you can add green beans - great.
