Anything you can no quickly with minimal washing up is always good.
In my more athletic days we used to do a lot of week long completely self sufficient stuff and nearly everything was boil in the bag to keep the weight down as we carried everything we needed.
I take it you are not intending on roughing too much? Nowadays with wife and dog in toe when camping it tends to be more creature comforts. Cornbeef hash, grilled fish, jkt potatos. We still do some BIG stuff like lamb shanks. Chicken kebabs, pitta bread & rice is always a winner. Curry & rice.
