Thumbs up Chicken Asparagus and Mushrooms on a bed of boiled rice

Ingredients,

2 large Chicken Breast, chopped into chuncks.
One can of Campbell's Condensed Asparagus Soup
1/2 pint of milk
Hand full of mushrooms roughly chopped
6 - 8 stalks of Asparagus chopped
Rice for two (follow rice cooking instructions)
1 tbl spoon Vegatable oil,
1 vegitable stock cube

Add the oil to a cold wok or large frying pan and heat.
When hot add Chopped Chicken Breast.
- start the rice in the pan with the stock cube-
When Chicken is browned off to your taste, Add Muchrooms
~1 minute later add tin of Campbell's Condensed Asparagus Soup
Add the chopped Asparagus
Add milk and reduce heat to low
Simmer for 5-7 mins whilst stiring

Add the rice to the plate and heap the Chicken and Muchrooms onto the rice with a large spoon/ladle.

Delish..

Here's something I made yesterday that worked so well I thought I'd post it on here. Red onion chutney.

4 large red onions peeled and sliced (not chopped or diced).
1 garlic clove, crushed.
50g butter.
100g muscavado sugar
125ml white wine vinegar
1 tablespoon groundnut oil
Small pinch of crushed chilli flakes
salt and pepper

Fry the onions, garlic, butter and seasoning in a large pan over a low heat until soft but not burnt. this should take about 20 minutes.

Add the sugar, white wine vinegar and chilli and bring to the boil. Then turn the heat down low and simmer for about 30 minutes until most of the liquid has been reduced and the onions have a sticky appearance.

Allow to cool.
