Personally I would use EPDM. Better than nitrile for heat use, much tougher than viton and if it does burn, it doensn't give off toxins like Viton does. However in industry the recommended materials for use with O2 are EPDM, stainless steel and bronze.

Not brass? what about Naval brass?

I recon you would get IP creep with a Stainless Steel HP seat
