I went in and bought a set of 316L dome nuts and used them after seeing someone tear their suit putting on their set by catching a fold of back material between the wingnut and plate.
I reckon it was an isolated incident but since I know never take the wing off the tanks except for maintenance they are a good solution for me.

I have never had a problem with wingnuts.

But carry some spares as dropping a wingnut and having it bounce overboard can really spoil your day.

Mushrooms

I use the CD mushroom headed nuts - no bolt can stick out of it, so any excess will have to protrude from the outside - I've added capping bolts onto mine so they don't catch on anything.
You should be able to get the CD ones from your local LDS - you only need a screwdriver to do/undo them.
