Outbacks are good and so are Red Lobsters.
International House of Pancakes (IHOP) and Pondersrosa (IIRC) arte great fro breakfast and setting you up for the day.

All can be found in and around the area of I-Drive.

Outside of the Orlando area, but within a drive are NASA and Busch Gardens.
Check timetables and if you get a chance to see a shuttle launch, then definately make apoint of being there, whatever time of day or night. You won't be allowed into NASA for a launch, but you'll get the full effect from 10 miles away.
