Woohoo I cooked dinner tonight!
I actually had time to make myself a meal today which was awesome! instead of bacon and cheese or peanut butter sandwiches I have been eating for the past few days.

the joys of a decent meal

had some nice oven baked aubergines with garlic (hmmm aubergine), made some sweet potato, spinach and goats' cheese pasta bake with some slow roasted tomatoes on the top

and had mango for dessert hmmmmmm mango.....i could eat boxes of mangoes

so anyone else having anything good?

All you do is gently fry an onion and garlic [to taste] with the oil from a tin of anchovies then add a jar of passata with garlic and herbs, warm through, then stir in a pack of mixed seafood [prawns, mussels, squid etc] and the anchovies [chopped] then simmer for 5 mins toss through some cooked linguine and Bob's your Aunties live in lover
