| Roasted vegetables in a tarragon butter sauce. This is a slight modification of one of my best recipies and should work fine. Serves two hungry people. Adjust quantities as required. 500g baby new potatoes. 1 fennel bulb. 2 medium carrots. 2 medium courgettes. 1 large red onion. 3 decent sprigs of thyme. 150g unsalted butter (don't panic). 1 tbs taragon leaves. Olive oil. Salt. Black pepper. To serve. Crusty bread. 1. Heat the oven to 190 c. Par boil the potatoes in a pan of boiling salted water for 5 minutes. Drain and set aside to cool. 2. Peel and cut the onion into 8 wedges. Cut the carrots and courgettes into large dice. Slice the fennel bulb in slices about as thick as two one pound coins. 3. Cut each potato in half and place in a large roasting tin. Drizzle with olive oil and season with salt and pepper. Place in the oven for 10 minutes. After that time, add the carrots, courgettes, onion and fennel. drizzle a little more oil over them and add the thyme sprigs and more pepper but not salt. Replace in the oven for another 15 to 20 minutes or until coloured well. 4. While the vegetables are roasting, make the sauce. Add the butter to a small pan over a very gentle heat and slowly melt it. When it has melted skim the white foam off the top with a spoon. When most of the foam has gone, carefully pour the clarified butter through a fine sieve into a bowl, leaving behind the solid residue. Finely chop the tarragon and add to the clarified butter. Lightly season and set aside to keep warm. 5. When the vegetables are done, spoon them onto warm plates, drzzle generously with the sauce and serve with crusty bread.

| Fajitas is a good call. Don't put tomatoes in though....just make a fresh salsa instead. For the "strips" use lots of peppers, big field mushrooms, red onion, spring onion, and courgette. Yum. However, first call would be anything asian - can substitute tofu for meat if you want, or just cook it without. My fave "quick but yum" though is Quorn Thai green curry - takes 15 mins to cook and is lovely.

| If you like it spicy... Chilli Spaghetti Fry some cherry tomatoes, sliced onion, tomato puree, sundried tomato puree, chopped sundried tomatoes, oregano, salt, pepper, pinch of sugar, chopped black olives (optional) in extra virgin olive oil. Bung on a pan of spaghetti or linguini. Grate some cheese (not for Turbs, obviously Chop some garlic and chilli and put it in a micro-waveable cup, covered with extra virgin olive oil. When the spag is al-dente (or better still, slightly crunchy), drain it and whop the garlic/chilli cup in the microwave for 1 minute. Stir the chilli and garlic, along with the fresh parsley into the spag. Dollop the tomato sauce on top, lashings of fresh ground pepper and ground salt to taste then sprinkle on the cheese. Yum yum - one of my fave meals. I often have tuna, prawns or mussels with it too, and sometimes I substitute the tomato sauce for a sauce of pureed red pepper, chilli, cherry tomatoes and tomato puree.

| Havnt read through so apologies if been done, but ........... Tortilla Espanola This isnt the crappy spanish omellete, but a mega wedge more like a pie. It has only 3 ingredients (4 if you count salt). Eggs, Potatoes and Onion. A nice big slice seved slightly warm with fresh crusty bread, A side salad if you like, but all that's needed in my book is a glass of vino. Lol I can actually taste it. | Ken Hom has a good vegetarian book on the market. I am not a veggie myself but I use this book for side dishes and when I cook for veggie friends. To change the subject slightly, I have a buddy who is intolerant to lactose and gluten. It is a nightmare when we go abroad. She is so limited to what she can eat in a resturant and trying to read foreign ingredients on packets is no fun. Anyone got any suggestions. Don't suggest that we take food with us, the baggage allowance goes on dive gear. Paul.

| I've postponed the evening as Turbs will be home late after having been out on the boat with OW students. Gives me a bit more time to convince her to eat steak. Thank you everyone for your suggestions. I have written them down and will be trying them out on an unsuspecting Turbanator.
