Ta Dah! What d'ya reckon?

The moment has arrived - my veggie mate and her new (non-veggie) chap are coming to dinner tomorrow evening.

I've bought red and yellow cherry tomatoes, green, red, orange and yellow peppers, courgettes, fresh chillis and red onion which I'm going to coat with olive oil and seasoning, and roast until soft. Then I shall mix the roasted veg with freshly cooked pasta and fresh basil, put it in an ovenproof dish, top with a combination of goat's cheese and feta cheese (she does eat this), and put in the oven until the cheese is golden.

It will be served with a watercress, lambs tongue lettuce and fresh spinach salad with a home-made balsamic vinegar and olive oil dressing, and a basket of hot ciabatta bread.

To follow is an M & S Vanilla Cream and Blueberry Tart.

Does that sound ok? Would you eat it?

Not only would I eat this, I'm now very, very jealous of your friends.

Mostly because it sounds delicious, but also a little bit because a supper like that would be about a zillion points on the diet I am on at the moment

A wee tip my sweet - cut the peppers in half and microwave them for a couple of minutes before slicing and adding to the rest of the stuff. I have found in the past that everything else turns soft and goes to mush before the peppers are cooked.

Chippy Tea?

I'm veggy and love Quorn, especially with Marmite and Fisherman's Friends.

Check the ice cream and stuff for Gelatin, some of us can be a bit arsy about that kind of stuff. Sounds great though, hope it goes well.
