Easy veggie recipes

I might be entertaining a veggie friend at the weekend. She cooked Turbs and I a delicious meal when we had dinner with her a few weeks ago and I'd like to cook something equally as nice for her, rather than just order in pizzas.

What can I do that's easy and tastes fab?

Oh, and Turbs hates cheese, so could the recipes use as little of this as possible, please. He'll moan enough about the lack of meat, I don't want to give him anything else to complain about.

Is your friend a vegan or just a veggie?

Just a veggie. It's the girl you met at Brixham

Ah yes, well off the top of my head, does roasted vegetables in a taragon butter sauce sound ok?

Go out and buy some quorn fillets. Then make anything you'd normally make with chicken.

Don't mess around with nut cutlets and stuff like that, because they taste like shit and all vegetarians actually hate them.

Actual suggestion:

Lemon & Black pepper quorn fillets (supermarket freezer compartment) grilled and cut into strips, served either on a bed of wild rice or with grilled (crispy) slices of polenta. Serve with caesar salad (using Paul Newman caesar dressing, which doesn't have anchovies but still tastes OK).

Crisp dry white wine.

It all sounds fantastic to me, but then, I'll eat anything (except pink-skinned peanuts).

Does quorn not have a funny texture? Genuine question based on what others have said, not personal experience. Is it similar to tofu, which I quite like?

I was thinking along those lines, Frosty. Nice and easy, with some wild rice and crusty bread. And maybe some crumbled feta cheese for those who like it.

I have to agree with Tom on this, Sandie's Veg and I'm part-time and that's what I do.

This might help?:-

No, very different from tofu. If you can imagine chicken with a 'smoother' texture (i.e. no linear muscle tissue).
