So is it worth 'overfilling' tanks for colder dives as you will 'lose' gas due to the water temp.

But when the gas gets into your lungs it will be at body temperature so 'a lung-full' is the same unit regardless of cylinder temperature.

Just put the cylinders into the freezer before getting them filled and it will end up at a reasonable temp.
