I've used a squeezebox for about 2 years now and it's been mega. Works great with my mac, displays the BBC news ticker as a screensaver, and is digital all the way (so digital optical output to my amp.)

They're not cheap, but they work really well. Sound quality is top notch.

(iTunes library currently stands (using AAC 128k high-complexity for iPod capacity benefits) at 42Gb and growing. Plus I actually own every single CD that's loaded on the machine (circa 2500) unless I bought it from iTunes Music Store.)
