Yep - CDex is what I use too. It's a stunningly simple (and free!) peice of software with a high quality 'LAME' encoder built in. I recommend anyone wanting to convert CD-Audio to MP3 to check it out...

Itunes will rip cds to MP3.

Preferences > Advanced > Importing > select 'MP3 Encoder' from the "Import Using" menu.

That's based on itunes 7 for Mac.

I think you are right that you can't convert between formats once ripped, but certainly you can encode from the CD in different formats.
