Son, you're going to have to make up your mind about growing up and becoming aircrew. You can't do both.

The aircraft limits are only there in case there is another flight by that particular aircraft. If subsequent flights do not appear likely, there are no limits.

That's the one my my/our little group have. . . It's playing up at the moment (I think). We get different results depending on how far we open the valves on the cylinder, and it's also the same on the O2 side

Have you got the Analox screw in DIN adaptor thingy? If so, how tight is the screw in the middle of it? Not sure if it's the sensors or the adaptor. If the valves are open a couple of turns the hose blows off, and it never used to do that

Aren't these thingies in effect measuring the amount of impacts the gas molecules over time, thus flow rate will effect this?

I suspect they do. If the screw is loose (ish) then the results are all over the place. If it is tight, then it blocks the sampling hole and hey presto, no results either. . .

Nope we have the weebbles-wobble head which just sits against the DIN outlet. The one we used on Tala last week, the screw was done completely up and provided spot-on results.

Yeah, I have the DIN adapter with the flow restrictor screw. It comes factory set so that the gas doesn't flow too fast, but the little orange o-ring behind the screw gets trashed after a while, so you have to re-set it.
