Thanks for all the replies, so many so quickly, does no one do any work?

She would like it to be basic, based on compact digital, the post that sums up the problem is this one:

Most PADI instructors will teach it, but I would like one who practices it. She has used our Fuji F10 for a couple of years now, and really just wants some instruction on 'moving off the Auto feature' really (already using manual white balance of course!).

EMUP --> I'll look into this.
Cornwall --> Is a long way, we drive it every year, we'll be there for a week in August, so if nothing sorted by then ...

I really would have a good look at Maria Munn. Not only is she a very good photographer but she specialises in compacts. Whilst the short courses are normally Oxford way they are very reasonable and pool based rather than theory.

Daniel - I'm based in London, don't know if that's any good, but I do specialise in compact, I use a Fuji F30 myself. Might be a tad far for your missus to travel though

There was an article in one or more of the magazines (Diver, Dive or Sport Diver) recently. At least one lot went with Martin Edge and were seriously impressed.

Lawson Wood also offers courses out of Eyemouth
