| Commercial Lobster Processing Just thought I would pass this on: Since we manufacture vessels for the commercial fishing industry we get a few magazines through. I always try to have a look at them, mainly to see what the competition is up to. In one of the latest there is a feature about a new way of processing lobsters – they are now pressure treated which kills them “in a matter of seconds”. Previously they were heat treated to both kill them and kill off bacteria, which meant that the meat adhered to the inner parts of the shell. This was uneconomical in some instances as it caused significant waste. Pressure treating them means the meat is actually separated from the shell and can be removed whole and raw, plus bacteria are killed. Quite how humane this is remains to be seen! Obviously this is not an option for us, but then i think in comparison to these guys, the number of lobbies we take is very small.
