Pretty well any time is good for Sudan and you'll see plenty of sharks at Sanganeb etc whenever you go. I was there in August (ten years ago) and we had a wonderful trip. It was hot, of course, but the newer boats are fully aircon and it's not uncomfortably hot on deck when the boat is moving. I reckon the ideal time would be April/May/June.
