Visiting NSW Oz end of month

Hi all

The wife and I are off to Aus at the end of the Jan for month on business, but we have a 10 to 12 day stretch that we will be free to do the sights.
We will be traveling by car from Sydney to Brisbane so any recommendations of dive sites and other dry sites welcome. Like wise if there are things not to do !
